This light and refreshing watermelon mousse is a great way to savor those juicy farm-fresh melons one more time. Blended until smooth and gently folded with cream and citrus, this no-bake dessert is cool, airy, and just the right balance of sweet and tangy.

Watermelon isn’t just a treat, it’s full of benefits too. Rich in vitamin C, lycopene, and hydrating electrolytes, it’s a wholesome base for a dessert that feels indulgent but nourishing. This mousse sets up beautifully in small glasses and looks extra special with a sprig of chocolate mint on top. watermelon mousse

prep time: 15 min

cook time: 5 min

4 servings

Ingredients

2 cups watermelon juice

½ tbsp gelatin

1/3 cup sugar

10-15 fresh mint leaves

generous pinch of salt

1 tbsp lemon juice

½ cup cold whipping cream (you can use any type of cream)

Grated Dark Chocolate

preparation

  1. Prepare watermelon by chopping and blending / juicing.

  2. Add ½ cup watermelon juice into a heatproof bowl. Sprinkle gelatin over it. Let it soak or bloom in the juice for about 10 to 15 minutes.

  3. Add mint leaves to the remaining juice and blend.
    Add the sugar, salt and lemon juice and mix well.

  4. Place the bowl with gelatin over hot water and mix well till the gelatin dissolves. Add the dissolved gelatin mixture to the mint watermelon juice. Stir well.

  5. Whip the cold fresh cream till soft peaks form.

  6. Add the whipped cream to the watermelon juice and whisk lightly till all the cream is incorporated into the juice mixture.

  7. Pour the mixture into individual serving bowls. Put it in the fridge to set, best if left overnight.

  8. Serve topped with grated chocolate and chocolate mint.

  9. Enjoy!
